“Meatballs”

Walnuts and mushrooms are used to get that nice meaty taste in these delicious, Passover-friendly "meatballs."
Ingredients
2 cups walnuts
2 cups shiitake mushrooms
2 cloves garlic
½ cup onion, chopped
1 teaspoon dried thyme
½ teaspoon salt
½ cup matzo meal
Oil (for frying)
Instructions
1. Process mushrooms, walnuts, garlic and onion in a blender or food processor.
2. Add spices and matzo meal and mix thoroughly.
3. Heat oil in a frying pan.
4. Roll into small meatballs and fry in oil until all sides are browned.
5. Serve warm.
